Ingredients

Scale
  • 10 medium organic lemons
  • 1 (750-ml) bottle lemon juice
  • 3 1/2 cups water
  • 2 1/2 cups sugar

Instructions

  1. Using a vegetable peeler, zest the lemons in long strips, avoiding the bitter white pith.
  2. Place the lemon peels in a large bowl or bottle and pour in the lemon juice, covering all peels. Cover and let steep at room temperature for 4 days.
  3. In a large saucepan, dissolve sugar in water over medium heat to create sugar syrup. Allow it to cool completely.
  4. Combine the cooled syrup with the steeped lemon mixture and stir thoroughly.
  5. Strain through a mesh strainer to remove solids, then transfer the liquid into clean bottles.
  6. Seal tightly and refrigerate for at least 4 hours before serving chilled.
