  3. Form the mixture into logs (about 12-14 logs) and place on a parchment-lined baking sheet. Freeze for 1 hour.
  4. Melt chocolate chips with coconut oil in a microwave-safe bowl or double boiler, stirring until smooth.
  5. Dip each frozen log into the melted chocolate and return to the lined plate. Freeze again for about 10 minutes until set.
