  • 1 large sweet onion, sliced 1/2 inch thick
  • 4 cloves garlic, finely chopped
  • 1 tsp sea salt or pink salt
  • 1/2 tsp freshly cracked black pepper
  • 2 cups whole shiitake mushrooms
  • 2 cups baby bella or cremini mushrooms, sliced
  • 4 cups organic chicken broth or vegetable broth, gluten-free
  • 2 cups loosely chopped kale leaves
  • 1/2 cup coconut milk or coconut cream

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté sliced onions until golden brown (about 15 minutes). Add chopped garlic and cook for another minute.
  2. Incorporate shiitake and baby bella mushrooms into the pot, cooking for 5–7 minutes until softened. Season with salt and pepper.
  3. Pour in the chicken or vegetable broth, bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Stir in chopped kale leaves and simmer for an additional 5 minutes until tender.
  5. Blend in coconut milk or cream until heated through. Adjust seasoning if needed before serving.
