  • 4 cups cubed seedless watermelon
  • 1 cup diced cucumber
  • 3 scallions, sliced diagonally
  • ¼ cup chopped cilantro
  • ½ teaspoon finely minced ginger
  • 1 ½ tablespoons fresh lime juice
  • 1 ½ tablespoons honey or agave syrup
  • 1 teaspoon toasted sesame oil
  • 2 teaspoons soy sauce
  • few slices jalapeño (optional)
  • 2 shiso leaves, stacked, rolled and cut into thin ribbons (optional)
  • 12 teaspoons toasted sesame seeds (for garnishing)

Instructions

  1. In a medium bowl, combine cubed watermelon, diced cucumber, sliced scallions, and chopped cilantro.
  2. In a small bowl, whisk together ginger, lime juice, honey (or agave), sesame oil, and soy sauce until well combined.
  3. Pour the dressing over the watermelon mixture and gently toss until evenly coated. Season with salt and pepper to taste.
