  • 1 lb large shrimp, peeled and deveined
  • 2 cups cooked jasmine or basmati rice
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, diced
  • 1/2 cup shredded carrots
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce or coconut aminos
  • Juice of 1 lime
  • Salt and black pepper to taste

Instructions

  1. Gather all ingredients: Peel and devein the shrimp if needed. Dice the red bell pepper, slice the avocado, and chop the cilantro.
  2. In a skillet over medium heat, add olive oil. Once hot, add shrimp seasoned with garlic powder, smoked paprika, salt, and black pepper. Cook for about 3–4 minutes until pink and cooked through.
  3. In a mixing bowl, combine cooked rice, pineapple chunks, diced red bell pepper, shredded carrots, lime juice, and soy sauce or coconut aminos. Stir well.
  4. Serve by spooning the rice mixture into bowls topped with cooked shrimp slices of avocado and red onion. Garnish with fresh cilantro.
