  • 2 cups cooked chicken, diced
  • 8 oz rotini or bowtie pasta
  • 1 can pineapple tidbits (14 oz), drained
  • 1 red bell pepper, diced
  • ½ cup shredded carrots (optional)
  • 2 green onions, sliced
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ⅓ cup reserved pineapple juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • ¼ teaspoon garlic powder
  • Salt & pepper, to taste

Instructions

  1. Cook pasta in salted water until al dente. Rinse under cold water and drain.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, pineapple juice, Dijon mustard, apple cider vinegar, honey, garlic powder, salt, and pepper.
  3. In a large bowl, combine cooled pasta with chicken, pineapple tidbits, red bell pepper, green onions, and carrots. Mix well.
  4. Drizzle dressing over the salad mixture and gently fold to coat.
  5. Cover and refrigerate for at least one hour before serving.
