  • 6 ounces diced turkey strips
  • 3 whole peaches
  • 3 ounces ricotta cheese
  • 1/2 cup chopped pistachios
  • 1/4 cup honey
  • 1/4 cup white balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1 shallot

Instructions

  1. Cook the turkey strips in a skillet over medium heat for about 10 minutes until crisped; drain excess fat.
  2. Boil water in a cooking pot, add tortellini, and cook according to package directions. Drain and rinse with cool water.
  3. Cut peaches in half, remove pits, brush lightly with olive oil if desired, and grill for 3-4 minutes on each side until charred.
  4. In a large bowl, combine cooked tortellini, turkey strips, and grilled peaches.
  5. Whisk together honey, vinegar, and olive oil to create the dressing; pour over salad mixture and toss gently to coat.
