  • 3/4 cup unsalted butter, cubed
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 egg yolk
  • 1 cup sugar
  • 2 tablespoons lemon zest (zest from 2 lemons)
  • 1 teaspoon vanilla extract

Instructions

  1. Heat lemon juice in a saucepan until boiling; reduce heat and simmer until concentrated (about 2 tablespoons). Remove from heat, stir in butter until melted, and let it cool.
  2. In a mixing bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, mix egg, egg yolk, sugar, lemon zest, and vanilla extract. Stir in the cooled lemon-butter mixture.
  4. Combine wet and dry ingredients; mix until just combined.
  5. Chill dough for at least 45 minutes.
  6. Preheat oven to 350°F (175°C). Roll out dough to about 1/8-inch thick and cut into rounds.
  7. Bake for 6–7 minutes or until edges are lightly browned. Cool on a wire rack.
