  • 2 tablespoons taco seasoning
  • 1 (10 oz) can Rotel diced tomatoes
  • 2 cups chicken broth
  • 8 oz pasta shells
  • 2 cups shredded cheddar cheese (plus more for serving)
  • Sour cream
  • Green onions
  • Cilantro
  • Avocado

Instructions

  1. In a large skillet over medium-high heat, heat olive oil. Sauté diced onion for 3 minutes; add minced garlic and sauté for an additional minute.
  2. Add ground beef or turkey to the skillet, cooking until browned (about 10 minutes). Drain excess grease but leave a tablespoon for flavor.
  3. Stir in taco seasoning, Rotel tomatoes, and chicken broth. Mix thoroughly before adding pasta shells.
  4. Bring to a boil, then lower heat to medium-low. Loosely cover and simmer for 12–15 minutes until pasta is cooked through, stirring occasionally.
  5. Remove from heat and stir in shredded cheese until melted. Serve hot with desired toppings like sour cream, green onions, cilantro, or avocado.
