  • ½ red onion, diced
  • 4 cups kale, chopped
  • 4 eggs
  • 2 tablespoons shredded parmesan cheese
  • ¼ teaspoon crushed red pepper

Instructions

  1. In a large skillet, heat 2 tablespoons of avocado oil over medium heat. Add sweet potatoes, salt, garlic powder, and paprika; cook undisturbed until browned (about 5-6 minutes). Flip and continue cooking until crispy (10-12 minutes total). Remove from skillet.
  2. Add remaining oil and diced red onion to the skillet; sauté until softened (1-2 minutes). Add kale and remaining salt; cook until wilted (about 2 minutes). Return sweet potatoes to the skillet and mix.
  3. Create four wells in the mixture; crack an egg into each well. Cover the skillet until egg whites are set (about 5-7 minutes). Top with parmesan cheese and crushed red pepper before serving.
