- 5 to 10 pounds beef shoulder or beef butt
- ½ teaspoon kosher salt per pound of meat
- ¼ cup golden monk fruit
- ¼ cup paprika
- 2 tablespoons garlic powder
- 2 tablespoons black pepper
- 2 tablespoons ground ginger
- 2 tablespoons onion powder
- 2 teaspoons dried rosemary
- The night before cooking, rinse the beef and pat dry with paper towel.
- Rub salt all over the beef.
- Place the beef in the refrigerator overnight to brine.
- In a mixing bowl, combine golden monk fruit, paprika, garlic powder, black pepper, ground ginger, onion powder, and dried rosemary.

- Shred the beef using claws or two forks before serving.
