  • 5 to 10 pounds beef shoulder or beef butt
  • ½ teaspoon kosher salt per pound of meat
  • ¼ cup golden monk fruit
  • ¼ cup paprika
  • 2 tablespoons garlic powder
  • 2 tablespoons black pepper
  • 2 tablespoons ground ginger
  • 2 tablespoons onion powder
  • 2 teaspoons dried rosemary

Instructions

  1. The night before cooking, rinse the beef and pat dry with paper towel.
  2. Rub salt all over the beef.
  3. Place the beef in the refrigerator overnight to brine.
  4. In a mixing bowl, combine golden monk fruit, paprika, garlic powder, black pepper, ground ginger, onion powder, and dried rosemary.
  5. Wet your hands slightly so that the seasoning mixture adheres better to the meat.
  6. Generously apply the spice rub all over the beef.
  7. Preheat your smoker, oven or traeger grill to 225 degrees Fahrenheit.
  8. Cook the seasoned beef for 8 to 12 hours or until it reaches an internal temperature of 195 to 203 degrees Fahrenheit.
  9. Once cooked, remove from heat and let rest briefly.
  10. Shred the beef using claws or two forks before serving.
