  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries (hulled and sliced)
  • 1 cup canned mandarin oranges (drain well and pat dry with paper towel)
  • 1 cup fresh blueberries
  • 1 cup fresh kiwi (peeled and sliced)
  • 1 Tablespoon apricot jam (for glaze, optional)
  • 2 teaspoons water (as needed, for glaze)

Instructions

  1. Preheat your oven to 350°F and grease a baking pan.
  2. In a stand mixer, cream together the butter and sugars until fluffy. Add vegetable oil, egg, and extracts; mix well.
  3. In another bowl, whisk flour with baking soda, cream of tartar, and salt. Gradually combine with wet mixture until smooth.
  4. Spread the dough into the prepared pan and bake for 16–18 minutes until lightly golden. Let cool.
  5. For the frosting, beat cream cheese until smooth. Gradually add softened butter and powdered sugar; mix until fluffy.
  6. Spread frosting over cooled crust and top with sliced fruits as desired.
  7. Optional: Microwave apricot jam for about 10–15 seconds to soften it, then stir in water as needed to achieve desired consistency. Brush or dab this mixture lightly over your fruits until they are coated.
