  • 1 cup water
  • ½ cup sugar
  • 3 ounces plant-based gelling agent (like agar-agar or vegan gelatin)
  • ¼ cup cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Roll out the sugar cookie dough into a large circle about ½ inch thick and place it on a parchment-lined baking sheet. Bake for 15-20 minutes until lightly golden. Allow cooling completely.
  2. In a mixing bowl, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until combined.
  3. Slice half of the strawberries and set aside. In a saucepan over medium heat, combine water, sugar, gelling agent powder, and cornstarch. Stir until thickened; remove from heat and let cool slightly.
