  • 2 cups fresh or frozen strawberries
  • 2 tablespoons granulated sugar (or honey)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/4 cup honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine chopped strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla extract. Cook over medium heat for about 5-7 minutes until thickened. Set aside to cool.
  2. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  3. In a large mixing bowl, combine oats, flour, brown sugar, baking powder, salt, and optional cinnamon. Cut in cold butter until crumbly; stir in vanilla and honey/maple syrup if using.
  4. Press 2/3 of the mixture into the prepared pan as the base. Spread cooled strawberry filling evenly over it and top with remaining crumble.
  5. Bake for 35-40 minutes until golden brown and bubbly at the edges. Allow to cool completely before slicing.
