  • 1 ½ cup almond flour
  • ¼ cup butter (salted)
  • ½ tsp salt
  • ½ tsp garlic powder
  • 2 tsp olive oil (or more if you like)
  • 4 large eggs
  • 1 cup heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • 6 oz spinach (baby)
  • 1 cup onion (finely chopped)
  • 1 cup feta (crumbled)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine almond flour, salt, and garlic powder. Melt butter and mix into dry ingredients until well combined.
  3. Press mixture into an 11'-12' pie dish; bake for about 10 minutes until slightly firm.
  4. Sauté onions in olive oil until softened; add spinach until wilted.
  5. In a bowl, whisk together eggs, heavy cream, salt, and pepper until frothy.
  6. Layer half of the spinach-onion mixture and half of the feta in the cooled crust; pour half of the egg mixture over top. Repeat layers.
  7. Bake for 30 minutes on the lower rack, then move to the upper rack for an additional 15 minutes or until set.
  8. Allow to cool slightly before slicing; serve warm or at room temperature.
