  • 23 cups shredded green cabbage
  • 8 small corn or flour tortillas
  • 2 avocados
  • 1/4 cup Cotija cheese
  • Juice of 2 limes
  • 1/4 cup oil
  • 1/2 cup chopped green onions
  • 1/2 cup cilantro leaves
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • 1/2 cup sour cream or full-fat Greek yogurt
  • 1/4 cup water (if needed, to thin sauce)
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (more or less to taste)
  • 1 teaspoon coarse sea salt

Instructions

  1. Prepare the sauce by blending oil, green onions, cilantro, garlic, lime juice, salt, and sour cream until smooth. Adjust consistency with water if necessary.
  2. Toss shredded cabbage with some of the sauce in a mixing bowl.
  3. Season shrimp with chili powder, cumin, onion powder, garlic powder, cayenne pepper, and salt. Sauté in a skillet with oil over medium-high heat for 5–8 minutes until pink.
  4. Assemble tacos by layering smashed avocado on each tortilla followed by slaw and cooked shrimp. Top with Cotija cheese and lime wedges.
