  • 1 packet taco seasoning mix
  • 1 cup salsa
  • 1/2 cup chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • Tortilla chips
  • 2 cups shredded Mexican blend cheese
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 small onion (finely chopped)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup chopped fresh cilantro
  • Sour cream
  • Guacamole

Instructions

  1. In the slow cooker, combine chicken breasts, taco seasoning, salsa, chicken broth, black beans, corn, and chopped onion. Mix well.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  3. Shred the chicken with two forks and return it to the slow cooker; mix well with remaining ingredients.
  4. Preheat oven to 400°F (200°C). Spread tortilla chips on a baking sheet and layer with shredded chicken mixture and cheese.
  5. Bake for 10-12 minutes until cheese is melted.
