  • 1 cup uncooked lentils (green, brown, or black)
  • 4 cups water
  • 1 bay leaf
  • 1 medium cucumber, diced into 1/4-inch pieces
  • 1/2 small red onion, thinly sliced
  • 1 1/2 cups grape or cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup chopped roasted red bell pepper
  • 2 tsp dried oregano
  • 2 tbsp fresh mint, minced
  • 2 tbsp fresh orange juice
  • 2 tbsp fresh lemon juice
  • 1 tbsp dijon mustard
  • 1 tbsp honey or agave
  • 1/4 cup extra-virgin olive oil
  • Salt and black pepper, to taste

Instructions

  1. Start by rinsing the lentils under cold water. In a pot, combine the rinsed lentils with water and add a bay leaf. Bring to a boil over medium heat. Once boiling, reduce heat to low and simmer for about 18 minutes until tender but not mushy. Drain and set aside.
  2. While the lentils are cooking, chop your cucumber, onion, tomatoes, olives, and roasted red bell pepper. Place these vegetables in a large mixing bowl.
  3. In a separate small bowl, whisk together dried oregano, minced mint, orange juice, lemon juice, dijon mustard, honey or agave syrup, olive oil, salt, and black pepper until well combined.
  4. Once the lentils are cooked and drained, add them to the mixing bowl with the chopped vegetables. Pour the dressing over everything and gently toss until all ingredients are coated.
  5. Serve immediately or refrigerate for up to three days.
