  • 1 1/2 pounds flank or skirt steak
  • 8 cloves garlic, chopped
  • 1 tablespoon onion powder
  • 1 tablespoon sweet/smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons chili powder
  • 1/2 teaspoon cayenne
  • 2 tablespoons lemon zest
  • Salt and chili flakes (pink Himalayan salt)
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup feta cheese
  • 1 cup Tzatziki sauce
  • 6 fresh pitas or naan, warmed
  • Lettuce, pickled red onion, and pepperoncini, for serving

Instructions

  1. Preheat your oven to 475°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss together the steak with cumin, oregano, chili powder, cayenne, lemon zest, and season with salt. Drizzle in olive oil and massage it into the meat. Let it marinate for 20-30 minutes if time permits.
  3. Place the seasoned steak on the prepared sheet pan and bake for 10 minutes. Afterward, switch to broil for an additional 2-5 minutes until the meat begins to crisp up.
  4. Once done, remove from the oven and let the steak rest for about 10 minutes. Thinly slice it against the grain.
  5. Crumble feta cheese into your tzatziki sauce and mix well.
  6. Stuff each warmed pita with sliced steak, tzatziki sauce, and any desired toppings like lettuce, pickled onions, or pepperoncini.
