  • 1 lb ground beef (or ground turkey/chicken)
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1 cup broccoli florets
  • 1 cup zucchini, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, chopped
  • 1 cup sliced mushrooms
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions; set aside.
  2. In a skillet over medium heat, add 1 tbsp olive oil and cook the ground beef until browned. Stir in soy sauce, garlic powder, salt, and pepper until well combined.
