  • 1 1/2 medium red bell peppers
  • 1 (15 oz) can chickpeas (drained and rinsed)
  • 3 Tbsp fresh lemon juice
  • 3 Tbsp tahini
  • 2 cloves garlic
  • 2 Tbsp olive oil
  • Salt for seasoning
  • Cumin for seasoning

Instructions

  1. Preheat the broiler. Line a baking sheet with aluminum foil. Core, seed, and slice the red bell peppers into quarters.
  2. Broil the peppers for 10-15 minutes until charred. Transfer them to a resealable bag; seal and let steam for 10 minutes before peeling.
  3. In a food processor, combine peeled chickpeas, lemon juice, tahini, garlic, salt, cumin, and diced roasted pepper pieces. Blend until smooth.
  4. If desired, add water to achieve your preferred consistency. Serve drizzled with olive oil and topped with diced pepper or herbs.
