  • 4 large eggs
  • 1 cup granulated sugar
  • 22 oz raspberries (fresh or frozen)
  • 2 lemons (juiced)
  • 1 cup unsalted butter
  • 1 lb mascarpone cheese
  • 1 cup whipping cream
  • 2 packs ladyfingers

Instructions

  1. Prepare raspberry curd by combining raspberries, lemon juice, water, and sugar in a saucepan over medium heat. Cook until thickened slightly, then strain and let cool.
  2. In a mixing bowl, whisk eggs and sugar until fluffy. Melt butter, let it cool slightly, then add to the egg mixture along with mascarpone cheese. Fold gently until combined.
  3. In another bowl, whip cold cream until soft peaks form; fold into the mascarpone mixture.
  4. Dip ladyfingers in the cooled raspberry mixture and layer them at the bottom of a dish. Spread half of the mascarpone filling over the ladyfingers followed by half of the raspberry curd. Repeat layers.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or overnight before serving.
