  • 3 boxes Berry Blue Jell-O mix (3 oz each)
  • 3 boxes Strawberry Jell-O mix (3 oz each)
  • 4 envelopes unflavored vegan gelatin (1 oz each)
  • 9 cups boiling water (4 ½ cups for each layer)
  • 8 ounces Cool Whip (thawed)
  • Sprinkles (optional)

Instructions

  1. Prepare two 8'' x 8'' pans.
  2. For the blue layer: In a large bowl, whisk together Berry Blue Jell-O and 2 envelopes of vegan gelatin. Stir in 4 ½ cups boiling water until dissolved. Pour into one pan and refrigerate for at least 4 hours until set.
  3. For the red layer: Repeat the process using Strawberry Jell-O and remaining vegan gelatin in another bowl with boiling water. Pour into the second pan and refrigerate for another 4 hours.
  4. Once both layers are set, cut them into small squares.
  5. In parfait glasses, layer blue Jell-O pieces followed by Cool Whip until filled. Top with sprinkles if desired.
