  • 115 g unsalted butter (melted or room temp)
  • 135 g light brown soft sugar
  • 55 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100 g milk chocolate chips
  • 100300 g mini eggs

Instructions

  1. Preheat oven to 190ºC (170ºC fan). Line a 9×9 inch baking tin with parchment paper.
  2. In a mixing bowl, combine melted butter, light brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract; mix well to blend.
  4. Stir in plain flour, cornflour, bicarbonate of soda, and salt until just combined.
  5. Gently fold in milk chocolate chips and most of the mini eggs.
  6. Press the dough into the prepared baking tin and top with remaining mini eggs.
  7. Bake for 18-22 minutes or until the top is dry but soft to touch.
  8. Allow to cool completely before cutting into squares.
