  • 1 pint grape tomatoes, halved

  • 1 cup diced cucumber
  • 3 tablespoons capers, drained
  • 3 tablespoons freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 2 tablespoons plain yogurt
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon chopped parsley

Instructions

  1. Cook the pasta in boiling salted water according to package instructions until al dente. Drain and let cool.
  2. While pasta cools, prepare the vegetables: dice onions and cucumbers; halve grape tomatoes; pit olives if necessary.
  3. In a mixing bowl, whisk together lemon juice, olive oil, yogurt, mustard, garlic powder, salt, and pepper until smooth.
  4. In a large bowl, combine cooled pasta with tuna (drained), onions, tomatoes, cucumbers, olives, capers, and parsley. Pour dressing over the mixture and toss gently to combine.
