  • 3 tbsp culinary lavender
  • 3/4 cup / 170 g / 6 oz salted butter, room temperature
  • 3 large eggs, room temperature
  • 3 tbsp lemon juice
  • 2 cups / 240 g / 9.5 oz all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup / 120 ml / 4 fl oz whole milk, room temperature
  • 1 1/2 cups / 180 g powdered (confectioners’/icing) sugar, sifted
  • 3 to 4 tbsp whole milk for glaze
  • 1/2 tsp lavender extract
  • 2 to 3 drops purple food coloring

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour and baking powder; set aside.
  3. In a large bowl, combine sugar, lavender, and lemon zest; rub together to infuse flavors.
  4. Cream softened butter into the sugar mixture until light and fluffy.
  5. Add eggs one at a time, then mix in lemon juice.
  6. Gradually incorporate flour mixture, alternating with milk until just combined.
  7. Pour batter into the prepared pan and smooth the top.
  8. Bake for 50-60 minutes or until golden brown and a skewer comes out clean.
  9. Cool in the pan for 15 minutes before transferring to a wire rack.
