Ingredients

  • Ready-rolled shortcrust pastry
  • Lemons (juice and zest)
  • Caster sugar
  • Eggs
  • Unsalted butter
  • Icing sugar (for dusting)

Instructions

  1. Preheat the oven to 180°C (350°F). Remove the shortcrust pastry from the fridge 30 minutes prior to use. Roll out if needed and cut into circles to fit tartlet tins.
  2. Press pastry circles into the tins, trimming excess edges. Pre-bake for about 10 minutes with baking beans until lightly golden, then let cool.
  3. In a bowl, whisk together eggs, caster sugar, lemon juice, and zest. Melt butter in a saucepan over low heat; slowly stir in the egg mixture until thickened.
  4. Pour the warm lemon curd filling into each shell and bake for another 5 minutes until set.
  5. Allow tartlets to cool completely before dusting with icing sugar.
