  • 1 tbsp lemon zest
  • 2 tsp vanilla extract
  • 1½ cups fresh blueberries (coated in flour)
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with parchment paper.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, mix sugar and oil until smooth; then add sour cream/yogurt, eggs, lemon juice, zest, and vanilla.
  3. Combine wet and dry mixtures gently; fold in floured blueberries.
  4. Pour batter into the loaf pan; bake for 55-65 minutes until golden.
  5. Once cool, drizzle with the glaze made from powdered sugar and lemon juice.
