  • 1 lb pizza dough
  • 3 tablespoons olive oil
  • 8 cloves garlic (minced)
  • 3 cups shredded mozzarella cheese
  • 14 ounces quartered artichoke hearts (drained)
  • Zest of 1 lemon
  • 2 to 3 cups baby arugula
  • 1/3 cup freshly grated Parmesan cheese
  • Freshly squeezed lemon juice
  • Dash of crushed red pepper flakes
  • Sea salt to taste

Instructions

  1. Preheat the oven to 500°F, placing a pizza stone inside if using.
  2. Bring the pizza dough to room temperature and divide it into two pieces.
  3. On a floured surface, shape each piece into a round pizza about 10 to 12 inches in diameter.
  4. Transfer the shaped dough onto a floured pizza peel or baking sheet.
  5. Brush olive oil on the dough, sprinkle minced garlic and mozzarella cheese evenly over it.
  6. Distribute drained artichoke hearts and lemon zest on top.
  7. Bake in the hot oven for about 12-14 minutes until golden brown.
  8. Remove from the oven, add fresh arugula, Parmesan cheese, and drizzle with lemon juice. Season with red pepper flakes and sea salt before slicing.
