  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 teaspoons fresh lime zest
  • 2 and 1/2 tablespoons coconut oil, melted
  • 1 large egg
  • 1/2 cup coconut milk
  • For Glaze: 1 cup confectioners’ sugar
  • 1 and 1/2 tablespoons key lime juice
  • 1 teaspoon lime zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a mixing bowl, whisk together flour, baking powder, salt, sugar, and lime zest.
  3. In another bowl, mix melted coconut oil, egg, and coconut milk until well combined.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined.
  5. Fill each cavity of the donut pan two-thirds full with batter.
  6. Bake for about 10 minutes or until a toothpick comes out clean. Let them cool slightly before transferring to a wire rack.
  7. Prepare the glaze by whisking together confectioners’ sugar, lime juice, lime zest, and salt until smooth.
  8. Once cooled completely, dip each donut in the glaze and sprinkle with toasted coconut.
