  • 1/2 onion, quartered
  • 4-inch piece ginger, sliced
  • 1 cinnamon stick
  • 46 star anise
  • 1 tablespoon salt
  • 1 pound boneless strip steak, thinly sliced
  • 9 oz hearts of palm noodles
  • 1 cup broccoli, chopped
  • 1/4 onion, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 4 mushrooms, thinly sliced

Instructions

  1. Prepare the broth: In a pressure cooker, combine beef bones, quartered onion, ginger, spices (cinnamon stick, star anise), salt, and add 2 quarts of water.
  2. Pressure cook on high for 1.5 hours. Allow natural pressure release for 15 minutes before releasing any remaining pressure.
  3. Strain the broth to remove solids and keep it simmering.
  4. Assemble your pho: In a bowl, add hearts of palm noodles, sliced steak, and vegetables. Pour hot broth over them.
  5. Garnish as desired with fresh herbs and lime juice.
