  • 3 jalapenos (stems removed and seeded)
  • 1 packet dry ranch dressing mix
  • 1 cup mayonnaise
  • 1 cup milk
  • 1 lb fusilli or rotini pasta
  • 1 can black beans (15 oz can, rinsed and drained)
  • 1 cucumber (peeled and chopped)
  • 1 red pepper (seeded and diced)
  • 3 plum tomatoes (chopped)
  • 1 cup corn
  • 6 green onions (chopped)
  • juice from 1 lime

Instructions

  1. Prepare the dressing by blending milk, mayonnaise, ranch seasoning, and jalapenos in a food processor. Chill for at least 20 minutes.
  2. Cook pasta according to package directions; add black beans in the last minute of cooking. Drain and rinse with cold water.
  3. In a large mixing bowl, combine chopped cucumbers, red pepper, tomatoes, corn, cooked pasta, and black beans.
  4. Stir in cheese, green onions, salt, pepper, and the chilled dressing until well combined.
  5. Refrigerate for at least one hour before serving. Squeeze lime juice over before serving.
