  • 3 cups caster sugar (superfine sugar)
  • ⅓ cup water
  • ¼ cup liquid glucose (or light corn syrup)
  • 1 teaspoon white vinegar
  • Red food coloring

  3. 3. In a heavy-based saucepan, combine sugar, water, glucose, and vinegar over low heat until dissolved.
  4. 4. Increase heat to boil and monitor with a candy thermometer until it reaches hard crack stage at 150°C / 302°F.
  5. 5. Remove from heat, mix in red food coloring, and allow bubbles to subside.
  6. 6. Dip each apple into the hot syrup, turning to coat evenly.
  7. 7. Place coated apples on the prepared baking sheet and allow them to cool completely.
