Instructions

  1. Using a vegetable peeler, carefully zest the lemons without including any white pith.
  2. Place the lemon peels in a glass jar and add the alcohol. Seal tightly and let infuse in a cool, dark place for at least 7 days.
  3. Prepare the sugar syrup by combining sugar and water in a saucepan over medium heat until dissolved; allow to cool.
  4. Once infused, mix the lemon-infused alcohol with the cooled syrup to taste.
  5. Strain if necessary and transfer to glass bottles; refrigerate before serving.
