  • Double crust pie dough (chilled)
  • 4 cups fresh blueberries
  • 2 cups wild blueberries
  • 3/4 cup granulated sugar
  • 5 tablespoons cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon fine sea salt
  • Diced unsalted butter for topping

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roll out chilled pie dough into two circles and place one in a pie dish.
  3. In a bowl, mix both types of blueberries with sugar, cornstarch, lemon zest, lemon juice, cinnamon, nutmeg, and salt until coated.
  4. Pour the filling into the crust and dot with diced butter.
  5. Cover with the second dough circle; seal edges and cut slits for steam to escape.
  6. Brush with an egg wash made from egg yolk and cream; sprinkle sugar on top.
  7. Bake for 15 minutes at high heat, then reduce to 350°F (175°C) and bake for an additional 45–60 minutes until bubbly and golden brown.
