  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 egg (or substitute)
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup graham cracker crumbs
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups mini vegan marshmallows
  • 1 cup milk chocolate chips
  • 1/2 cup crushed graham crackers for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix melted butter, brown sugar, and granulated sugar until smooth. Add egg (or substitute) and vanilla extract; mix well.
  3. In another bowl, whisk together flour, graham cracker crumbs, baking powder, and salt.
  4. Gradually add dry ingredients to wet ingredients; stir until just combined.
  5. Press two-thirds of the dough into the bottom of the prepared pan and layer with chocolate chips and mini vegan marshmallows.
  6. Crumble remaining dough over the top and sprinkle with crushed graham crackers.
  7. Bake for about 25 minutes or until golden brown. Allow to cool completely before cutting.
