  • 8 ounces short-cut pasta (Radiatore, Elbows, or Cellentani)
  • 1 cup diced red bell pepper
  • 3/4 cup diced celery
  • 1/3 cup diced red onion
  • 4 hard-boiled eggs, diced
  • 1 cup matchstick carrots
  • 1/4 cup sundried tomatoes (optional)
  • 1 tablespoon fresh parsley, minced
  • 1/2 cup mayonnaise
  • 1/2 cup fat-free Greek yogurt
  • 1 tablespoon red apple vinegar
  • 2 teaspoons spicy brown mustard
  • 3 teaspoons raw honey
  • 1 smashed clove of roasted garlic
  • 1 teaspoon fresh-cracked black pepper

Instructions

  1. In a bowl, mix mayonnaise, Greek yogurt, vinegar, mustard, honey, garlic, and pepper. Refrigerate while preparing the salad.
  2. Cook pasta in salted boiling water according to package directions. Drain and let cool in a large bowl for about five minutes.
  3. Add bell pepper, celery, onion, eggs, carrots, and half of the parsley to the cooled pasta. If desired, include sundried tomatoes.
  4. Gradually add dressing to the salad mixture until you reach your preferred consistency. Mix gently and fold in remaining parsley.
