- 8 ounces short-cut pasta (Radiatore, Elbows, or Cellentani)
- 1 cup diced red bell pepper
- 3/4 cup diced celery
- 1/3 cup diced red onion
- 4 hard-boiled eggs, diced
- 1 cup matchstick carrots
- 1/4 cup sundried tomatoes (optional)
- 1 tablespoon fresh parsley, minced
- 1/2 cup mayonnaise
- 1/2 cup fat-free Greek yogurt
- 1 tablespoon red apple vinegar
- 2 teaspoons spicy brown mustard
- 3 teaspoons raw honey
- 1 smashed clove of roasted garlic
- 1 teaspoon fresh-cracked black pepper
- In a bowl, mix mayonnaise, Greek yogurt, vinegar, mustard, honey, garlic, and pepper. Refrigerate while preparing the salad.
- Cook pasta in salted boiling water according to package directions. Drain and let cool in a large bowl for about five minutes.
- Add bell pepper, celery, onion, eggs, carrots, and half of the parsley to the cooled pasta. If desired, include sundried tomatoes.
- Gradually add dressing to the salad mixture until you reach your preferred consistency. Mix gently and fold in remaining parsley.
