  • ¾ cup granulated sugar
  • ¼ cup unsalted butter (melted)
  • 2 large eggs
  • ¾ cup buttermilk
  • 1 ½ teaspoons vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Prepare the strawberries by tossing them with granulated sugar and letting them sit for about 10 minutes. Drain well, toss with flour, and set aside.
  2. Preheat your oven to 350°F (175°C) and prepare a loaf pan.
  3. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, mix remaining sugar, melted butter, eggs, buttermilk, and vanilla until smooth.
  5. Combine wet and dry ingredients gently without overmixing.
  6. Fold in the floured strawberries.
  7. Pour batter into the prepared pan; bake for 55–65 minutes or until a skewer comes out clean.
  8. Allow cooling before glazing with powdered sugar mixed with milk and vanilla.
