  • ¼ teaspoon chili powder
  • tiny pinch kosher salt
  • 1 cup crumbled Cotija cheese (or fresh parmesan/queso fresco)

Instructions

  1. Boil or grill the corn until cooked through. Keep warm.
  2. In a mixing bowl, combine mayonnaise, sour cream, lime zest, lime juice, cayenne pepper (if using), chili powder, and kosher salt. Mix well.
