  • 1½ tbsp unsalted butter
  • 2 oz kataifi
  • 4 oz pistachio cream
  • 1 tbsp tahini
  • pinch salt
  • 6 oz ice cream (your choice)
  • 16 oz milk chocolate (chopped or chips)
  • ¼ cup refined coconut oil

Instructions

  1. Thaw kataifi for 2 hours at room temperature or overnight in the fridge, then finely chop.
  2. Melt butter in a large pan over medium heat, add kataifi, and toast until golden brown (8-10 minutes). Cool completely in a mixing bowl.
  3. Mix cooled kataifi with pistachio cream, tahini, and salt. Spoon into ice cream bar mold filling each cavity about ⅓ full, gently tapping to remove air pockets. Insert sticks and freeze for 30 minutes.
  4. Soften ice cream slightly, then fill each cavity until full. Freeze for at least 2 hours or overnight.
  5. Melt chocolate and coconut oil together in increments until smooth. Dunk each bar in chocolate until coated, holding vertically until set.
  6. Optionally drizzle melted pistachio cream and green candy melts over bars; sprinkle with chopped pistachios and edible gold dust before serving.
