  • 2 T grapeseed oil
  • 3 T water
  • 1 t smoked paprika
  • 1 t grated ginger
  • 1 t minced garlic
  • Juice of one lime
  • 1.5 lb boneless, skinless wild-caught salmon (cut into chunks)
  • 1 zucchini (cut into thick slices)
  • 1 red onion (cut into chunks)
  • 1 yellow bell pepper (cut into chunks)

Instructions

  1. In a small bowl, whisk together all marinade ingredients until well combined.
  2. Place the salmon and vegetables in a baking dish, pour the marinade over them, and gently combine. Cover and refrigerate for about 15 minutes.
  3. Preheat your grill or broiler to medium-high heat.
  4. Skewer the marinated salmon and vegetable pieces onto skewers.
  5. Grill the kabobs for 5–7 minutes, rotating halfway through until the salmon is fully cooked. If broiling, arrange kabobs on a pan and broil for about 12 minutes, turning once.
  6. While cooking, reduce any leftover marinade in a saucepan by boiling it briefly.
  7. Drizzle the reduced marinade over cooked kabobs before serving.
