  • 1 poblano pepper, seeded and chopped
  • 2 tablespoons tomato paste
  • 23 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 12 corn tortillas
  • Extra virgin olive oil, for drizzling
  • 2 teaspoons dried parsley
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried chives
  • 1/2 teaspoon dried dill
  • 1 cup shredded Mexican cheese blend
  • Crema, avocado, cabbage, and cilantro (for serving)

Instructions

  1. Preheat oven to 425°F.
  2. In a skillet, heat olive oil and cook ground meat with onion and poblano until browned. Stir in tomato paste and spices; simmer to thicken.
  3. Bake corn tortillas on baking sheets for 7 minutes until crispy.
  4. Mix seasoning blend and sprinkle over baked tortillas.
  5. Assemble by layering cheese between half the tortillas; top with remaining tortillas and bake until cheese melts.
  6. Serve topped with chicken filling, avocado, cabbage, cilantro, and a dollop of honey lime crema.
