  • 1 tablespoon coconut oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • Salt and pepper, to taste
  • 1 red bell pepper, sliced

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
  2. In a large skillet over medium heat, melt coconut oil and sauté the chopped onion for 2–3 minutes until softened.
  3. Add minced garlic and grated ginger; cook for about 1 minute until fragrant. Stir in red curry paste and cook for another minute.
  4. Pour in the coconut milk, stir well, then add the fish sauce and brown sugar. Bring to a gentle simmer.
  5. Carefully add salmon fillets and sliced bell pepper to the skillet. Cover with a lid and simmer for 12–15 minutes until the salmon is cooked through.
  6. Garnish with fresh cilantro before serving with lime wedges.
