  2. In a small saucepan, combine butter, salt, and cream over medium heat; set aside.
  3. In another saucepan, mix sugar, corn syrup, and water; cook until it reaches 320°F.
  4. Gradually whisk in the warm cream mixture, then return to heat until it boils at 245°F to 250°F.
  5. Allow caramel to cool until thick enough to coat apple slices; insert sticks into the base of each slice.
  6. Dip or drizzle caramel over apple slices and refrigerate for about 15 minutes.
  7. Melt white and dark chocolate using a double boiler or microwave; drizzle over cooled caramel-coated apples.
  8. Chill again for another 15 minutes before serving.
