  • 2 medium boneless skinless chicken breasts
  • 1 cup finely chopped mushrooms
  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter
  • 2 tablespoons heavy cream
  • 1 tablespoon chopped fresh parsley
  • 1 sheet puff pastry (thawed if frozen)
  • 1 egg yolk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Season the chicken breasts with salt and pepper. Sear in a hot skillet until golden brown (2–3 minutes per side). Set aside to cool.
  2. In the same skillet, melt butter over medium heat. Sauté shallots until translucent, then add garlic and mushrooms; cook until liquid evaporates. Stir in heavy cream and parsley; remove from heat and let cool.
  3. Roll out puff pastry on a floured surface. Spread half of the mushroom mixture in the center, place one chicken breast on top, add remaining filling, and fold pastry over to seal.
  4. Preheat oven to 400°F (200°C). Brush the pastry with egg yolk for shine and bake for 25–30 minutes until golden brown.
  5. Allow resting for 5–10 minutes before slicing.
