  • 1 pound lean ground chicken
  • 2 green onions (diced (whites & greens))
  • 2 Tbsp. diced shallot
  • 2 tsp. minced garlic
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. Mexican oregano
  • 1/2 tsp. ground coriander
  • 1/4 tsp. black pepper
  • 1/4 tsp. kosher salt
  • 1/4 cup cilantro (chopped)
  • 1 Tbsp. chopped chipotles in adobo sauce
  • 2 Tbsp. light mayonnaise
  • Juice from 1/2 lime (about 1 Tbsp.)
  • 2 pasilla peppers (or other similar pepper)
  • Chicken hamburger buns (for serving)
  • Condiments/Toppings (for serving)

Instructions

  1. Combine the lean ground chicken with diced green onions, shallots, garlic, chili powder, cumin, Mexican oregano, ground coriander, black pepper, kosher salt, and chopped cilantro in a large bowl.
  2. Lightly mix using your hands until well combined.
  3. Pat out into four burger patties and place them in the freezer while you prepare the peppers.
  4. Preheat your grill or grill pan over medium heat.
  5. Roast the pasilla peppers for a few minutes, turning occasionally until they are charred on all sides.
  6. Remove from heat and cover with plastic wrap on a plate to steam for about five minutes.
  7. Grease the grill grates by dampening a folded paper towel with oil and using tongs to wipe it over the hot grates.
  8. Grill the chicken patties until they are fully cooked through, around 6–8 minutes per side.
  9. In a small bowl, mix together chopped chipotles in adobo sauce with lime juice and mayonnaise until smooth.
  10. Carefully chop off stems from roasted peppers and cut them in half. Discard seeds from the center and slice into strips.
  11. Once burgers are cooked through, serve them on buns topped with roasted peppers, chipotle mayo, and any additional condiments or toppings you desire.
