  • 3 TBSP white granulated sugar
  • 1 tsp pure vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup unsalted butter (melted and cooled)
  • 1 cup packed brown sugar
  • 1/2 cup white granulated sugar
  • 1 cup finely grated carrots (Make sure to grate them fresh. Don't use pre-shredded)
  • 2 large egg yolks (room temperature)
  • 2 oz cream cheese (room temperature)
  • 2 TBSP unsalted butter (room temperature)
  • 3/4 cup powdered sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, beat together the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, then set aside.
  3. In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl, mix cream cheese, melted butter, brown sugar, granulated sugar, egg yolks, and vanilla until well blended.
  5. Combine dry ingredients with wet mixture until just combined; gently fold in grated carrots.
  6. Scoop dough onto prepared sheets, creating an indentation in the center for filling.
  7. Fill each indentation with cream cheese filling before topping with more dough.
  8. Bake for about 15 minutes or until golden brown around edges.
  9. Allow cooling before serving.
