  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar

Instructions

  1. Shred the carrots and set aside on a paper towel to absorb excess moisture.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar using an electric mixer. Add eggs one at a time and mix in vanilla extract, shredded carrots, and old-fashioned oats.
  3. In a separate bowl, sift together flour, salt, baking soda, cinnamon, and ginger. Gradually combine dry ingredients with the wet mixture until just mixed.
  4. Chill the dough for 20–30 minutes before scooping out 2-tablespoon-sized portions onto a parchment-lined baking sheet.
  5. Preheat the oven to 350°F (175°C) and bake for 12–15 minutes until golden around the edges but slightly soft in the center.
