  • 1.5 kg beef shoulder
  • 2 tbsp olive oil or coconut oil
  • 1 large yellow onion
  • 4 cloves garlic
  • 1 scotch bonnet pepper
  • 2 tbsp fresh thyme leaves
  • 2 tsp ground allspice
  • 1 tsp smoked paprika
  • 400 ml canned coconut milk
  • 500 ml chicken or vegetable broth
  • 2 tbsp tomato paste
  • 2 large sweet potatoes
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 2 carrots
  • 1 lime
  • salt and freshly ground black pepper
  • fresh chopped cilantro or parsley

Instructions

  1. Pat dry the beef cubes and season with salt and pepper. Sear in batches in hot oil until browned.
  2. Sauté diced onion and minced garlic until soft, then add thyme, allspice, and smoked paprika.
  3. Stir in tomato paste and deglaze the pot with broth.
  4. Return beef to the pot, add remaining broth and coconut milk, then simmer for about 1 hour.
  5. Add cubed sweet potatoes and other vegetables; continue simmering until tender.
  6. Finish with lime juice before serving.
