  • 6 boneless, skinless chicken thighs
  • 1 tablespoon white vinegar
  • Juice of 1 lemon
  • 8 cups chicken broth
  • 2 carrots, diced
  • 1 large yellow onion, diced
  • 1 large tomato, quartered
  • 1 and 1/2 cups medium-grain rice
  • 2 potatoes, diced very small

Instructions

  1. Marinate chicken thighs with vinegar, lemon juice, salt, pepper, paprika, garlic, and olive oil for at least one hour.
  2. In a large stock pot, brown the marinated chicken on medium heat until golden.
  3. Sauté onion and tomato in the same pot until softened. Return chicken to the pot.
  4. Add broth and water; bring to a boil then simmer for one hour.
  5. Shred the cooked chicken and return it to the pot.
  6. Stir in rice and carrots; cook for another thirty minutes.
  7. Add diced potatoes and simmer until all ingredients are cooked through.
  8. Let rest before serving; enjoy warm!
